kamoshi, a dessert shop in Ohiradai, Hamamatsu

Ohiradai is the neighbourhood right next to Lake Sanaru. A well-off area, in other words.. I came to visit a good dessert shop in this neighbourhood.

It’s a residential area, but the sun was already blazing in the morning. Japanese summers are hot.

The facilities are far too good to call this just a neighbourhood park. It looked like a place kids would love.

I got here an hour before opening and I was still third in line. The strange thing about this neighbourhood is that there is nothing around, yet people drive over and queue up.. Which makes me think catchment-area analysis is meaningless around here. Maybe having a proper car park matters more?

Every one of the desserts is sharply made. Banana bread, banana tatin, gateau chocolat and so on.. This is what makes the shop special: even though these are Western-style desserts, they use rice flour and ferment the dough with a special yeast. (That fermenting is why the shop is called kamoshi, which means “to brew”.) So every dessert shares a rich, almost cheese-like texture. It is remarkable that someone is making desserts with this much originality out in the provinces. This is a level worth queueing for even in the middle of Tokyo, and it made me feel the strength of the region.

This is my first canele of this style; it feels like a cross between a Basque cheesecake and a canele.

I never expected to eat desserts this distinctive and this well made in a place like this. But the queue is so long that going often will not be easy..
