58 Hokkien Soba is a Chinese-style ramen shop from the owner who used to run Chunky Myeonga, the Hong Kong-style wonton noodle place.

Sambal Ebi Soba, Soup (large)
Singapore-style prawn noodles, served up like a bowl of ramen. You can taste the care that went into every single topping, and there’s plenty of shrimp to work through too. Stirring in the sambal sauce brings the shrimp flavour out even more. For someone who loves shrimp to begin with, this was about as good as it gets.

They’ve clearly put a lot of thought into the noodles as well.
Rice
With so many toppings you start to feel a little short on noodles towards the end, but the rice arrives and the portion lands just right.

This time I went for the Dry version..
The noodles
Delicious again. I thought the Dry was a bit better for enjoying the deep, concentrated shrimp flavour, while the Soup would be the way to go if you like a prawn-broth soup.
