The cake shop at the Mandarin Oriental hotel in Nihonbashi sells an incredible cake. It is called KUMO, and everyone says the queue is so long that it is hard to get one.
KUMO
It means “cloud” in Japanese. The outside has to be chocolate, so I am really curious about the technique behind shaping it into a cloud like this.
Inside
Cracking the shell open, it turns out to be a very thin layer of chocolate. The inside has a complex structure and tasted light and refreshing. Raspberry was the base this time, but apparently the filling changes with the season. How many times would you have to queue to try them all.. Anyway, with a design close to art and a taste to match, I could see why people line up for it.

The jelly is full of goldfish. A witty dessert, perfect for summer.
Flower Pot
So pretty. It is chocolate-based and the flavour is solid too. I would like to eat this shop’s desserts regularly, but it takes some effort.
Inside
Honey I bought as a souvenir
It looks like butter or jam, but it is honey with pistachio or raspberry mixed in. Sweet, with a deep flavour. It is good on toast.. and the jars themselves are pretty enough to display like cosmetics.

Their sense of style reaches even this far..
