Hachigo, a ramen shop in Ginza, is run by a chef who came up through French restaurants, and the queue outside is very, very long.. I had been meaning to stay away from places like this.. but the moment I hear there’s a line, I seem to end up going to stand in it automatically..

The table
Chuka soba
A flavour with a huge amount of care packed into it. Happily, it doesn’t stray far from the framework of a basic niboshi shoyu ramen, so it’s very straightforwardly delicious.
The noodles
The broth and the noodles are nicely balanced.
Chashu
If it’s this good, the queue makes sense.
