In Tsukiji’s inner market, between the two big-name sushi shops Sushi Dai and Daiwa Sushi, there’s a sushi shop called Yamazaki. The line is shorter than at the big names, but it’s still a fairly long line. I went at an odd hour when there were few tourists and had the omakase.
The neta
The tourists were having the cheap set, and I went with the omakase..
Tamago comes first by default
That’s how this shop does it, apparently.
Buri, I think
Decent quality.
Suimono (clear soup)
Clam
Ika (squid)
Delicate.
Aji (horse mackerel)
Odori (live shrimp)
There’s none of the Edomae-style prep work, but every piece of neta is fresh.
Odori
Nice bite to it.
The heads get deep-fried..
Kinmedai (splendid alfonsino)
Gloriously oily and delicious.
Nodoguro (blackthroat seaperch)
Nice bite and beautiful too.
Otoro and chutoro
No explanation needed.
Shrimp, I think..
Ikura
Uni
And anago to finish
Sushi made with neta this good for a bit over 4,000 yen has to be called great value. If you want good sushi in the morning, give it a visit. If you want something delicious beyond value for money, though, you’ll have to go to a seriously high-end sushi shop.
