Incheon has plenty of genuinely skilled Chinese restaurants run by the old ethnic-Chinese families. Places like that exist here and there all over the country, but I doubt there is another neighborhood where you are as likely to bump into one just walking down the street as in Incheon. And the standard is high across the board.
Wonsseubu is one of those places.

Samseon jjamppong
This place is famous on YouTube for its samseon gochu jjamppong, the chili version, but since I cannot handle spicy food I just ordered the plain samseon jjamppong. Even so, this much heat was about right for me, and anything hotter than this would have been hard going.
The noodles
The squid in this jjamppong had a real spring to it, so I think they use fresh squid. It may blend into the broth a little less well, but I thought ordering one tangsuyuk and one samseon jjamppong and picking at them over drinks would work nicely.. My real target was the oyster jjamppong, but apparently they took it off the menu now that the weather has warmed up.. A shame, but I will have to wait for next winter..
Overall the food here is not bad, though the clams felt like frozen ones. Well.. it is still tasty, but there are other jjamppong places that do it better.. so I am not sure when I will end up going back. And the gochu jjamppong is too spicy for me to be interested anyway..
