260℃ Bakery in Hapjeong

A bakery called 260℃ has opened in Hapjeong. This one is all about sourdough too, apparently.

The place

It is a small bakery, but opening in Hapjeong has to mean they are confident about the bread.

The breads

You would think sourdough means campagne, but it turns out they make their ciabatta with sourdough as well.

This is sourdough too, they say. Though I cannot help wondering whether it really needed to be..

Where the name 260℃ Bakery comes from

260dosi bakery.

It is because they bake at the optimal temperature, apparently.

They normally seem to have baguettes and campagne as well, but I went late and it looked like those had all sold out.

Chestnut milk bread

With this one I did not really feel much of the sourdough character. It was sweet and easy to eat.

Eggplant and cheese ciabatta

260dosi bakery.

The eggplant and cheese ciabatta is baked until crisp, and it does feel like it goes past the basic idea of ciabatta as a light bread to eat with a meal, but it has that much more personality, crisp outside and chewy inside, and it was delicious, so I was very happy with it. Seriously good.

I have never seen a bakery this obsessed with sourdough. I have no idea where the compulsion to make even breads that do not need to be sourdough with sourdough comes from, but it tastes good, so next time I will have to try the campagne and the baguette too.
