I was at Nagoya Airport again, and this time I ate at Misen.

Kobukuro (pig uterus)

It’s a cut you run into at any sundae-guk place, and it isn’t a particularly strong-tasting one. But cleaned properly and dressed up spicy and tangy like this, it turns into something that would go perfectly with a drink. I was genuinely impressed.

The kitchen

Asari clam ramen

Packed with plump asari clams, properly purged of sand. Digging the meat out of the shells was half the fun. At a lot of places the clams haven’t been purged well, or they’re so small that picking them out barely registers, but at Misen they’re a real pleasure to eat.

The noodles

The noodles are good and the broth has a sharp kick to it, so it lands right on the Korean palate. Every time I eat something like this I think to myself that this isn’t a place for a meal, it’s a place where you drink and treat the dishes as snacks to go with it. And since there aren’t many chances to eat this kind of flavour in Japan, it also feels like a dress rehearsal before heading to Korea. All in all, I’m glad this place is at the airport.
