Very modern.
The bowl
So many different flavors packed into a single bowl. The broth is made from clams and sea bream, topped with truffle, porcini and sous-vide chashu, so it’s almost fine dining in ramen form. The structure of the flavors is astonishingly complex, and I had fun discovering something new with every bite.
The noodles
Whole wheat flour, as is the trend these days. I can see why it’s so popular.
