Shoushou, a Ramen Shop in Hachioji

When people talk about Hachioji, they talk about Hachioji ramen. It is shoyu ramen with a mountain of finely chopped onion piled on top. This time I stopped by Shoushou, said to be the most popular of the lot. You could fairly call it the original.

The noodles

With that much onion I expected a tough, heavy bowl like iekei ramen, but the soy sauce aroma was strong and it was mild with a hint of sweetness, a flavour even kids would enjoy. So this is what Hachioji ramen is. I added chashu and menma on top too, and it made for a generous, satisfying bowl.
