Jiro-Style Ramen Shop Fujimaru, Akabane

Fujimaru’s ramen is seriously addictive; once you have had it and liked it, you end up going back again and again. A few of my Japanese friends are addicts, so off we went.

Fujimaru ramen

fujimaru

This is the version with extra vegetables, garlic and fat. Even a regular portion of noodles is 350 grams. One bowl fills you up like three meals. It is a fairly plain shoyu tonkotsu flavor, yet strangely addictive. Maybe it is the abura, the pork fat.

The noodles

fujimaru

The thick noodles remind me of Korean kalguksu. The noodles were in especially good shape that day.

Chashu

fujimaru

There are two or three huge slabs of chashu in there. If you order extra chashu, the amount doubles or triples..

There is an egg in there too.

Extra abura

You have to pile on plenty of fat for it to taste right. At the end I dumped the whole thing in.

All done.

fujimaru

There were so many noodles that I could not finish the soup as well.

It is a ramen that gets its flavor from loads of fat, so there is simply no way it could taste bad. It is a junky flavor, but that is exactly what makes it addictive. As B-kyu gourmet goes, I would call it almost perfect. Though I do worry about the calorie overload.
