Brisk Stand won first place at the 2025 Japan Burger Championship, and lately it’s been opening branches all over the place. One opened in Nagoya not long ago, so I went to check it out.
The place
The line is on the long side, so I ended up waiting quite a while. Waiting isn’t exactly comfortable, but inside it was nice and calm.. Also, there are only a few seats on the first floor, but there’s more seating upstairs.
Oni Burger
It’s a collab with a YouTuber called Hikaru. I don’t really know much about him, but apparently he’s some kind of rival to HikaKin? Anyway, I’d recommend ordering this limited edition over the regular one. The limited edition isn’t really anything special: it’s the regular burger plus a fried egg, soy sauce and wasabi, and the set comes with large fries, so if you do the math, it’s the better deal.
Lemonade
Nothing special.
Menu 1
The burger menu.
Menu 2
The side menu.
Ginger ale
This one’s pretty decent too.
Hawaiian burger with pineapple
Basically a regular wagyu burger, and thanks to the pineapple’s nice balance of sweet and tart, I really enjoyed it. Wagyu is bound to be pretty fatty, so the pineapple seems like a good match.
Kitta Yatsu (“the cut one”)
This is the burger that won first place. They build the burger, cut it in half, and grill it in butter before serving. After eating it, I honestly wondered whether you can even call this a burger. It tastes more like eating a well-seared steak with bread.. It’s tasty, I’ll give it that. But maybe because the butter is so strong, the wasabi went really well with it. I have a feeling the wagyu + wasabi + burger combo is going to stick around for a while.
Cross-section
As you can see, it’s super rich. Wagyu is greasy enough on its own, and then they brush it with butter and grill it. Without the wasabi it would’ve been a struggle.. Or maybe younger people just like this kind of flavor.
French toast
The French toast was surprisingly good: ice cream flecked with vanilla bean, with warm bread and a honey sauce on the side. I think it was pretty much the perfect dessert for a burger place.. I’m definitely ordering it again next time..
Being Nagoya, you get trendy places like this popping up, which is fun. There’s always something new going on, so there’s never a dull moment.. Looks like I’ll be coming back and forth a lot from now on.
