Sumire is the miso ramen shop that represents Hokkaido, and now they have opened a branch in Yokohama. There was simply no way I could skip it.

Turns out it is just a plain boiled egg, not one simmered in soy sauce. I suspect that is deliberate, since the miso broth is so rich. The broth is well balanced, not cloying at all, with the gentle sweetness of the miso and the depth of the lard melting into each other. The flavour is great on its own terms, but the moment you take a spoonful you realise how piping hot it is and the sweat just pours out. Reproducing that scalding heat in a cup noodle would be tough, I thought. Seven-Eleven does sell a Sumire ramen, but it struck me that it is really only the shell of the real thing. (Maybe if you cooked it properly you could get closer..)

True to Hokkaido miso ramen, they use wavy, curly noodles.

It felt like I had just been to the sauna. If you get the chance, I recommend paying this place a visit.
