Well.. it’s a chain and the food comes flying out, so I wouldn’t call the taste amazing, but the strength of this place is speed. If you look closely the noodles are very thin, and the moment your order goes in they boil them in a flash and hand them over. That’s how they’ve pulled off taste and speed at the same time. Even next to a proper famous soba shop, judged on the soba alone it really doesn’t lose out.. the topping ingredients would be better at a famous soba shop, sure.. Of course not every chain soba shop serves it this way, but more and more of them do seem to be moving toward boiling to order..

I’ve eaten all sorts of soba while living in Japan, but if there’s a soba shop near your place that boils the noodles the moment you order, there’s really nothing left to envy. Same with bakeries – the one near your house is the best.. Le Pain Quotidien..
