Salt bread

This salt bread.. I carried it home before photographing it so the shape is wrecked, but it really is delicious. The balance is just right, I’d say. The name comes from yuilmui, “one and only”, and I’d thought that was a bit much for a bakery name — but at this level it really is something other bakeries would struggle to match, so fair enough.

Mentaiko baguette

I’m a fan of a mentaiko baguette (to go with a drink), and the one here isn’t salty at all — the balance of nutty richness and crispness is fantastic. Highly recommended as well. Salt bread is the big draw right now, so there’s a limit on how many you can buy and the queue is on the long side.. and I worry the line will only get longer once word about this place really gets out. It reminded me of Old Croissant Factory, which I once thought was the best in the country, a level you’d rarely find even abroad — and then the queue got so long I could never eat there again. With a place like this, better to go early and often and try lots of things.
