Chant d’Oiseau is a dessert shop in Kawaguchi, Saitama. From my place it’s about a four-hour round trip.. So I know how good it is, but unless they run a pop-up at Isetan it’s not easy to get hold of. This time I got lucky and they had one at Isetan, so off I went.

The tarte Tatin has the tartness of tropical fruit in it, so the balance is lovely. It’s got even better than it was two years ago.

There isn’t a bad cake in this place.

Misérable butter raisin sandwich

A misérable is normally a butter cake, but they’ve reworked it into a sandwich.

This one really does melt away. The vanilla flavor, and the raisins are distinctive too. I have no idea how anyone makes a dessert this good. If they hadn’t spent two years thinking every single day about how to make a better dessert, I don’t think something like this would ever have come out. People like this are why I tell myself I need to work harder too.
