I heard there was a great place in Samgakji, so we stopped by for a second round. I haven’t had proper hongeo (fermented skate) all that often, so it was a good chance.

Kimchi
This is one of the samhap trio (skate, boiled pork and kimchi). They say there’s a separate aged kimchi, but even this was nicely sour and really good.
It’s a skate joint, so of course we need a glass of fresh makgeolli.
Ahh~ that hits the spot~

They gave us some of the special cuts too. The quality is really good.. just look at the glossy sheen on that pork~ The skate wasn’t fermented all that strongly, though.
Hongeo-tang (skate stew)
The hongeo-tang was outstanding. It had that really rich, sinus-clearing skate punch. This is exactly when the word “jinguk” (a deep, full-bodied broth) fits perfectly. I’d like to go back just for this stew with makgeolli. If I ever find the time, that is.
