Toyohashi turned out to be a pretty interesting place. They even have some new styles of ramen.

At first, it didn’t say they were open; it said they were preparing. I went in and asked after the official opening time, and they told me they were open… I think they just forgot to change the sign. I guess that happens when a shop is run by young people. Anyway, because I thought they were closed, I ended up taking a walk around downtown.

Mentaikama Tama Soba

These are mixed noodles with butter and mentaiko. Surprisingly, it was delicious. The mentaiko cuts through the richness of the butter… I think it worked even better because the base was Tori Paitan.

Konbu Kake Soba

The broth was very clean and tasty. The noodles were a bit firm, but for a “new wave” shop, this is great.

Extra rice and Ajitama

Mixing the rice in is the best part…

For a new wave place, it was quite well-made, and I’m looking forward to seeing how they grow.
