Toyohashi turned out to be a pretty fun place. There are new styles of ramen there, too.
A place like this
At first the sign was not flipped to “open” but was still showing “getting ready”. I went in a little after opening time and asked, and they told me they were open.. so they had probably just forgotten to turn it over to “open” by mistake.. It is a shop run by young people, so I suppose that kind of thing happens. Anyway, because of that I assumed they were closed and ended up walking a full loop around the town..

It looks like a lot, but the items only differ a little in their ingredients..

The design was lovely, so I took a photo.

There were plenty of people who looked like otaku at a single glance..
Anyway, so I came back and finally got to eat.

Tori paitan, the chicken broth, is the base, and there are all sorts of variations.

Well, it is nice and tidy.
Mentai kamatama soba
It is a mixed noodle dish with butter in it and mentaiko as well. It was unexpectedly good. The mentaiko reins in the heaviness of the butter, so to speak.. and I suspect it worked even better because the broth base is tori paitan.
Kombu kake soba
A very clean broth, so it was tasty. The noodles were a touch firm, but for a new wave place this is very good.
Extra rice and a seasoned egg
It only tastes right once you tip the rice into the broth..
For a new wave shop it was put together really well, and I am looking forward to seeing where it goes from here.
