There’s a place in Shinbashi called Bifun Azuma. It has a pretty long history, and the line is always on the long side.

Entrance

This is the gomoku bifun.

I’d describe it as a kind of stir-fried noodle dish topped with all sorts of ingredients. The Korean equivalent would be japchae, I guess.. The taste wasn’t bad, but the portion was a bit underwhelming..

Soup

The soup is seriously rich. So much so that it doesn’t feel like a freebie. Popular places really are different somehow.

The noodles

Apart from the portion, it’s good. With a history this long, the flavor is reliably solid.
