I heard there was a special ramen shop in Hamamatsu, so off I went.
Daruma Seimenjo
This is the place.. When I got there the queue was pretty long, so I waited about an hour before getting in.

The shops around here are a bit worn, but this one is modern.

It was my first visit, so I had to order the most standard thing on the menu. The special dashi soba, marudori shoyu, 1,200 yen.

The ingredient notes
They blend five soy sauces and nine kinds of flour, apparently.. First time I have come across a blend like that..
And here it is at last.
Out comes a bowl refined enough that you would believe it came from the middle of Tokyo.
The noodles
Deep, rich flavour with not a hint of anything off. The chashu was a slight letdown, but this is about as close to a finished form as ramen gets. Getting there is not easy, though, so I have no idea when I will make it back.
