Konjiki Hototogisu, a Ramen Shop in Shinjuku

Konjiki Hototogisu, one of the top ramen shops around, has moved to Shinjuku.

The line

Konjikihototogisu

Well… this is pretty reasonable. About an hour’s wait before you can eat…

The counter

Konjikihototogisu

Very modern.

The bowl

Konjikihototogisu

So many different flavors packed into a single bowl. The broth is made from clams and sea bream, topped with truffle, porcini and sous-vide chashu, so it’s almost fine dining in ramen form. The structure of the flavors is astonishingly complex, and I had fun discovering something new with every bite.

The noodles

Konjikihototogisu

Whole wheat flour, as is the trend these days. I can see why it’s so popular.
