I went back to Matador, the famous gyukotsu (beef bone) ramen shop. This time I noticed they had opened a miso ramen shop as well, and I was curious what it would taste like. But I was after the shoyu, so I lined up at the original ramen shop.

Excellent quality as always.

The noodles are good too.

A style of ramen like this can only catch on because Japan’s ramen culture has developed in so many directions. It would be impossible to get this kind of flavor in Korea. I need to eat it often while I can.
