I had been to Jikaseimen Ito once before. Their niboshi (dried sardine) ramen with its springy noodles was really good. This time I tried a different dish.
Hinai chicken ramen
A clean, clear broth that is light yet deep. If the niboshi one has a slight off-note, this one has none of that at all. It comes down to taste, but I liked this one better. Even in Tokyo, a broth this clean at this level must be hard to find. If you are on the path of ramen, this is one you have to try.
Boiled dumplings
They had it as a side, so I ordered it. It is a clean, simple style with just a touch of soy sauce for accent. It went really well with the ramen. The more I learn about Tokyo’s ramen culture, the more it amazes me.
