This place has a really long name, but it’s a bakery called Chevre, and its thing is baking bread in a wood-fired stone oven.
Here’s the place.
Well.. it’s a popular spot, so I figured they’d do things right. It’s out in a pretty quiet area, yet plenty of people were showing up.
The hot dog menu
They sell all sorts of hot dogs. Soft-serve, too.
The breads
Surprisingly, they were selling some seriously proper bread.
Onion bacon bread, raisin bread
Some loaves go over 1,000 yen, so it’s not cheap. But you can see they don’t skimp on the ingredients.
Pain de campagne, spelt levain campagne
There’s campagne, which I love. It doesn’t look all that hard-crusted, though.
Retro baguette
The baguette, at least, is reasonably priced.
Bagels
They had bagels in several varieties.. there was just so much bread that looked delicious.
Cream puffs and fruit sandos
These all looked great too, but they’re pricey and I couldn’t buy that much bread, so I only took photos. Bread at this level isn’t something you come across often, and I have no idea how such a great bakery ended up out in the provinces.
Fig campagne
It isn’t hard, but it had a really refined flavor. My guess is that good flour, a proper fermentation and baking over a wood fire are what make bread like this possible. It’s a unique taste you just can’t copy with a regular oven.
Bagel
I toasted the bagel too, and it was amazing.
The underside of the bagel
Who knew it would look this tempting.. It’s great having a top-level bakery nearby, but the prices are top-level too, so I’d better work hard and earn.
