I hadn’t been to Shinbashi in a while, and there was a new ramen shop with a long line out front. It’s a tiny place with only about five seats, so of course you have to queue.

I guess this is what everyone’s doing these days.
Tsukemen
I’ve always felt this style of ramen was pretty much perfected at Ittou, the ramen shop in Shin-Koiwa, and this place is an extension of that. The quality is so good that I was happy with it, but there’s nothing new about the style. I think it stands out because Shinbashi doesn’t have many ramen shops at this level.
Chashu
Soup
Even if the style is similar, the details feel a little more refined here.
Once you’ve finished, they thin out the soup for you and give you a bit of rice too.
Dipping a spoonful of rice into that soup is a real treat. With service this good, no wonder the line is long.
